Cajun Shrimp Rolls

These Cajun Shrimp Rolls offer a spicy seafood twist on a classic New England sandwich. Grilled Cajun-seasoned shrimp are folded into a fresh cilantro, celery, and lemon mayo sauce, then piled into toasted garlic-buttered buns.

1.5 to 2 lbslarge shrimp (peeled and deveined)
Cajun seasoning (to taste) such as Slap Ya Mama or Willie Dust
2 Tbspcooking oil or butter (for grilling)
1/2 cupmayonnaise
2 stalkscelery (finely diced)
juice of 1/2fresh lemon
a handful offresh cilantro (chopped)
4garlic-buttered sausage rolls or top-split New England-style buns

Generously season your peeled and deveined shrimp with your favorite Cajun seasoning until evenly coated.

Heat your grill or flat top over medium-high heat with a little oil or butter. Cook the shrimp for 2 to 3 minutes per side until pink, opaque, and cooked through. Remove from the heat.

In a mixing bowl, combine the mayonnaise, finely diced celery, fresh lemon juice, and chopped cilantro, mixing well.

Gently toss the grilled shrimp into the creamy celery-mayo mixture until well-coated.

Toast your garlic-buttered sausage rolls or buns on the grill until warm and golden.
