BBQ Chicken, Bacon & Rice Skillet
An easy and flavorful skillet dinner combining tender BBQ-seasoned chicken, crispy bacon, and creamy rice. Finished with freshly grated parmesan and parsley, it makes a comforting weeknight meal in under 40 minutes.

Ingredients
4-6 slicesBacon
1 lbchicken tenderloins
BBQ rub
Cooking oil or butter
Minced garlic
1 cupMinute rice (instant white rice, uncooked)
1 cupchicken broth
1 cancream of chicken soup
Freshly grated parmesan cheese
Fresh parsley (chopped)
Method

Lay your bacon out on a baking sheet and bake in a preheated oven at 400°F until crispy. Remove, drain on paper towels, and cut into small pieces.

Season your chicken tenderloins generously with your favorite BBQ rub. Heat a skillet or pan over medium-high heat with a little oil or butter, add the chicken along with some minced garlic, and pan-cook until nicely seared and completely cooked through.
Leave the chicken in the pan rather than removing it.

Add the uncooked Minute rice, chicken broth, and cream of chicken soup directly into the skillet with the chicken and garlic, stirring well to combine. Bring to a simmer, cover with a lid, and cook until the rice is tender and the liquid is absorbed.

Stir the cut bacon pieces into the rice and chicken mixture.

Plate the dish and finish it with a heavy topping of freshly grated parmesan cheese and freshly chopped parsley.
